Creamy Lemon Chicken with Asparagus

Ingredients (serves 4):
  • 1.5 lbs boneless, skinless chicken breast
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup light cream or half-and-half
  • Juice and zest of 1 lemon
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish
Instructions:
  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  2. In the same pan, add garlic and sauté for about 30 seconds until fragrant.
  3. Add asparagus and cook for 3–4 minutes until just tender.
  4. Pour in chicken broth, lemon juice, lemon zest, and Dijon mustard. Stir and bring to a gentle simmer.
  5. Reduce heat and stir in cream. Let sauce thicken slightly, about 3–5 minutes.
  6. Return chicken to the pan and coat with sauce. Simmer for another 2–3 minutes.
  7. Garnish with fresh parsley and serve warm.
