Ingredients (serves 4):
- 1.5 lbs boneless, skinless chicken breast
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1/2 cup light cream or half-and-half
- Juice and zest of 1 lemon
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions:
- Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, add garlic and sauté for about 30 seconds until fragrant.
- Add asparagus and cook for 3–4 minutes until just tender.
- Pour in chicken broth, lemon juice, lemon zest, and Dijon mustard. Stir and bring to a gentle simmer.
- Reduce heat and stir in cream. Let sauce thicken slightly, about 3–5 minutes.
- Return chicken to the pan and coat with sauce. Simmer for another 2–3 minutes.
- Garnish with fresh parsley and serve warm.
